Changes of Fruit Quality by Storage Temperature for Marketing during Off-season in 'Wonhwang' Pear

Abstract

‘Wonhwang’ pear, harvested on Sep. 13, 2001 was investigated on the quality change of fruits after storage at 0$^{o}C$ and 15$^{o}C$ for marketing during off-season. Respiration rate and ethylene production in fruits stored at 0$^{o}C$ and 15$^{o}C$ were about three times lower than those stored at room temperature. Firmness of fruit tissue had no appreciable changes when stored at 0$^{o}C$ and 15$^{o}C$, but it was softened rapidly in 15 days when stored at room temperature. Weight loss was reduced when fruits were stored at low temperature. Glucose and fructose content were increased as storage period was extended, but not with sucrose content. In fruits kept at room temperature after storage for 10 and 20 days at 0$^{o}C$ and 15$^{o}C$, the respiration rate and ethylene production had little difference when compared with those at room temperature. However, the change of ethylene production was severe in fruits stored for 20 days at 15$^{o}C$. Firmness and glucose + fructose content were not changed when stored at 0$^{o}C$ and 15$^{o}C$, but sucrose content was gradually decreased as the storage period was extended. Water soaking did not occur when stored at 15$^{o}C$, while it was severe when fruits stored at 0$^{o}C$. From the above results, the quality of ‘Wonhwang’ pear fruits stored at 15$^{o}C$ were better than those kept at 0$^{o}C$.

2001년 9월 13일에 수확된 원황 배를 이용하여 단경기 출하에서 저온저장 기간 동안 과실의 품질변화를 조사하고, 15C 및 0C에 저장 후 모의 유통온도에서 품질변화를 조사하였다. 원황 배의 실온 및 15C와 0C 간의 호흡 및 에틸렌 발생량 변화를 조사한 결과 실온보다 15C 및 0C에 저장한 과실이 약 3배정도 낮게 나타났다. 15C 및 0C에 저장한 과실은 경도의 변화가 없었으나, 상온에 저장된 과실은 저장 15일부터 급격히 경도가 감소되는 경향을 나타냈다. 중량손실은 저장온도가 낮을수록 적은 경향이었다. Glucose+fructose 함량은 저장기간이 길어짐에 따라 증가하였고, sucrose 함량은 점점 낮아지는 경향을 나타냈다. 15C 및 0C에 10일 및 20일간 저장 후 상온에 둔 과실의 호흡 및 에틸렌 발생량 변화를 대조구와 비교하였을 때 거의 차이가 없었으나, 15C에 저장한 후 상온에 둔 과실은 에틸렌 발생 변화의 폭이 심하게 나타났다. 저장기간 동안 경도의 변화는 없었다. Sucrose 및 glucose+fructose 함량은 수확 후 저온저장된 과실의 당함량 변화와 유사한 경향을 보였고, 저장기간이 길어짐에 따라 점차 당 함량이 감소하였다. 15C에 저장된 과실은 수침상이 일어나지 않았으나, 0C에 저장된 과실은 수침상이 점점 심화되는 경향을 나타내었다. 그러므로 원황 배를 저온저장할 때 0C 보다는 15C에 저장하여 출하하는 것이 바람직하다고 생각된다.
