Influence of Modified Atmosphere Packaging on Fruit Quality of 'Tsunokaori' Tangor during Cold Storage

Abstract

To investigate the effect of modified atmosphere packaging, CO_2 absorbent CaO and ethylene absorbent KMnO_4 on the fruit quality of miscellaneous citrus fruit during cold storage, ‘Tsunokaori’ tangor citrus fruits ((Citrus sinensis×C. unshiu)×C. unshiu) in low density polyethylene bags with or without CaO and KMnO_4 were stored at 4$\pm$1$\circ$ under a relative humidity of 85$\pm$5%. The CaO remarkably decreased water loss of fruit during storage. The organic acid content and sugar-acid ratio of fruit gradually decreased in all treatments. But the sugar content did not change during storage. Internal CO_2 content of fruit was also discussed as related to the changes in fruit quality.

제주도산 만감류 '진지향'의 효과적인 장기저장에 대한 low density polyethylene film(0.03mm)를 사용한 MAP저장법 및 공기조성제인 CaO와 KMnO4의 효과를 검토하였다. 저장기간 동안 과실수분은 서서히 감소하였으나 LDPE를 사용한 MAP 저장과 CO2 흡착제인 CaO를 동시에 사용할 경우 대조구인 일반 저온저장은 물론 MAP 저장에 비해서도 과실감모를 현저하게 억제하였다. 유기산 함량은 저장기간 동안 모든 처리구에서 완만한 감소를 보였으며 당함량 증가는 관찰되지 않았다. 유기산 함량의 감소로 인한 당산비의 증가는 대조구에서 가장 현저하였다. 과실의 내부 CO2 함량은 CaO 처리구의 경우 저장 후 80일째부터 증가하기 시작하였으나 대조구, MAP 저장구, KMnO4 처리구의 경우 초기에 급격하게 증가하여 저장 후 70일째에 가장 높은 수치를 보인 후 감소하였다.
