Mineral Contents and Anti-inflammatory Effect of Ostrich Extract Combined with Korean Herb Medicine

Abstract

In this study, we developed an ostrich (bone and meat) extract that includes Korean herb medicine (OEKHM) and investigated its mineral contents and its effects on immune cell activation induced by lipopolysaccharides (LPS). Among the minerals examined, calcium in OEKHM was three times higher than that of pork or beef, most probably due to the supply of calcium from the herbs and the ostrich bones. Treatment with 0.1% OEKHM (v/v) inhibited immune cell activation by LPS. In addition, OEKHM may be used for supplying minerals and preventing autoimmune diseases.
