Potential Factors Associated with Skin Discoloration and Core Browning Disorder in Stored 'Niitaka' Pears

Abstract

The incidence of skin discoloration (light browning) in stored ‘Niitaka’ pears is a common problem in pear industry. The major factors of this disorder are not clearly understood. This study aimed to determine the potential causes of occurring such disorder in commercial storage. The potential role of ethylene on the incidence of this disorder was also studied. Skin disorder increased as storage period was extended. In particular, this disorder seemed to further increase when harvested fruits were exposed to ambient temperature excessively long time prior to storing at low temperature. Removing ethylene from the storage significantly delayed the occurrence of skin disorder. And the application of ethylene about 10 ${\mu}LáL^{-1}$ induced the skin disorder as well as core browning disorder. Skin discoloration disorder seemed to increase when fruit were exposed to ethylene contaminated environment during storage. Results of this study indicate that rapid control of storage temperature, optimum prestorage conditioning of harvested fruit, and ethylene removal from storage atmosphere would have a beneficial effect to keep freshness of ‘Niitaka’ pear through delaying physiological disorders such as skin discoloration and core browning.

동양배 ‘신고’의 저장 중 발생하는 과피 얼룩 장해는 우리 나라 배 저장에서 심각한 문제가 되고 있지만 그 발생 원인이 명확히 이해되지 않고 있다. 본 연구에서는 상업용 저장고에서 관찰되는 장해의 발생을 비교하고 아울러 에틸렌이 과피 얼룩과 과심 장해에 미치는 영향을 조사하였다. 과피 얼룩 장해는 저장 기간이 길어짐에 따라 증가하였으며 특히 저온 저장고 입고 전에 상온에 오래 노출시킬 경우 더욱 심하였다. 과피 얼룩 장해는 에틸렌에 의한 직접적인 장해이기보다는 에틸렌 농도가 높은 환경에서 조직의 노화가 빠르게 진행되어 일어나는 노화에 따른 생리적 장해로 판단된다. 에틸렌을 제거한 환경에서는 과피 얼룩 장해가 완전히 방지되지 않았으나 그 발생 시기를 현저히 지연시킬 수 있었다. 또한 수확한 과실을 저온 저장고에 입고한 다음 온도를 서서히 낮추는 관리 조건은 과피 얼룩을 비롯한 품질 저하의 원인이 되므로 수확한 과실은 적정 기간 예조(입고 전 처리)를 마친 다음 과실 온도를 빠르게 낮추어 주고 저장고의 에틸렌을 제거하는 것이 ‘신고’의 저장성을 향상시킬 수 있는 방법으로 생각된다.
