Abstract

Changes of soluble sugar and starch concentrations as well as composition in the fruits of apple cultivars differing in maturity were determined at different developmental stages. Sugar concentrations increased gradually during early fruit development, but increased very rapidly at later stages of maturity in all cultivars. Sugar accumulation in fruits reached its peak earlier for early season cultivars. Much of the increase in sugar concentration could be accounted for increase in fructose and sucrose at young and mature stages, respectively. ‘Kamhong’ and ‘Limmoncellar’ unlike the other cultivars in which fructose concentration was highest, were characterized by higher concentration of sucrose than fructose of total sugars. Sorbitol, on the other hand, was as low as 0.3% of fruit fresh weight during most of the time in all cultivars. Starch concentrations was highest 70 days after full bloom, followed by a decline. The decline was more rapid in early season cultivars than in late season cultivars. The ratio of amylopectin to total starch was high at the early stage of fruit development, but rapidly declined to low levels at later stages

사과 품종별 과실 생육 단계에 따른 가용성 당 및 전분 농도와 조성을 분석하였다. 당 농도는 생육 단계 초기부터 점차 증가하다가 후기에 급격히 증가하였으며 조생종일수록 일찍 진행되었다. 당의 증가는 발육 초기에는 과당이, 후기에는 자당이 주도하였다. 과당의 농도가 가장 높은 다른 품종과는 달리 '감홍'과 Limmoncella은 자당의 농도가 높은 특징을 나타내었다. 반면 소비톨은 모든 품종에서 생육 기간 동안 0.3% 정도의 낮은 농도를 나타내었다. 전분의 농도는 만개 후 70일에 가장 높았으나, 이후 감소하였으며 조생종일수록 일찍 감소되었다. 생육 초기에는 총 전분에 대한 amylopectin의 비율이 높았으나 이후 급격히 감소하여 낮아졌다.
