Effects of Charcoal-added Functional Paper on Keeping Leafy Lettuce Fresh during Marketing

Abstract

The effects of storage temperature charcoal-added paper box of leafy lettuce storage in CO_2 and ethylene gas absorption were investigated. CO_2 production was higher at 30$\circ$C than that at 13$\circ$C, but there were no differences in the rate of CO_2 absorption among treatments. Charcoal-added paper box was found to be efficient in absorbing ethylene as compared to the control and pulp treated paper after repeated use. No difference was found in the content of chlorophyll at the storage temperature of 13$\circ$C, though the rate of change in color was found to be faster at 30$\circ$C. The quality of leafy lettuce was better in charcoal-added paper boxes than in untreated or pulp treated boxes during storage. Sixty-three percent of leafy lettuce was rotten in untreated or pulp treated boxes during storage, whereas only 17% of lettuce was spoiled in charcoal-added paper boxes. The charcoal-added paper boxes were found to be more efficient in keeping the leafy lettuce fresh during transportation and also prolonged the shelf life after harvest.

잎상추 유통 시 박스포장에 목탄지를 봉입하여 저장온도에 따른 CO2 및 에틸렌 흡착능과 품질에 미치는 영향을 연구한 결과는 다음과 같다. 저장온도에 따른 CO2 발생량은 13℃보다 30℃ 저장구에서 현저하게 많았지만, CO2 흡착능은 처리구간에 차이가 거의 없었다. 에틸렌 발생량은 30℃ 처리구에서 다소 많이 발생되었고, 에틸렌 흡착능은 목탄지 처리구에서 현저하게 높았다. 에틸렌 흡착능은 재활용이 가능할 정도로 활성화되어 엽상추가 저장된 용기 내에서 에틸렌을 효과적으로 제거하였다. 엽록소 함량은 저장온도가 낮은 13℃에서는 차이가 없었지만, 30℃에서는 황화되는 증상이 매우 심하였고, 무처리 및 펄프 처리구보다는 목탄지 처리구에서 저장기간 동안 품질이 높게 유지되었다. 모의 유통기간 동안 잎상추의 부패율은 30℃ 저장구에서 무처리구 및 펄프 처리구에서는 약 63%로 매우 많이 부패되었지만, 목탄지 처리구에서는 부패율이 약 17%로 현저하게 감소되어 상추 수확 후 박스 내에 목탄지를 사용할 경우 단기간 유통중 신선도를 유지할 수 있었다.
