Microbiological Quality and Safety of Two Popularly Consumed Raw, Street Vended Foods in India

Abstract

One hundred and fifty samples each, of two popularly consumed raw foods-green chutneys and fruit salads, and 24 each water and surface swab samples collected from street vendors in Patiala City were investigated for their microbiological qualities using standard methods for enumeration, isolation, and detection of bacteria. Mean values of aerobic plate counts (APC), fecal coliforms (FC), and Staphylococcal counts (SC) of fruit salads and green chutneys were 8, 6.6 and 6.05 log cfu/g, and 5, 5.2 and 6 log cfu/g, respectively. For surface swab and water samples, mean values APC, FC and SC were $8,5.4\;and\;6log\;cfu/cm^{2}$, and 7.7, 6.9, and 5.04 log cfu/ml, respectively. Neither Shigella nor Eschericha coli O157:H7 was detected in any of the samples whereas Salmonella enteritidis was detected in five samples (three in fruit salads and two in green chutneys). Staphylococcus aureus accounted for 68% of the total SC. Of 25 coagulase-positive strains of S. aureus isolates, 19 produced enterotoxins A and B. Among 240 isolates obtained from APC plates containing food, water, and swab samples, Staphylo-coccus spp., Micrococcus spp. and Enterobacteriaceae were major isolates. The results of this study revealed poor microbiological quality of the food samples. Appropriate measurements must be taken by government agencies to ensure the safety of this food group.
