Abstract

Effects of manufactured soluble dietary fiber on improvement of antioxidant system in rats fed high-cholesterol diets were investigated. Soluble dietary fiber was prepared from wooden chips of oak (Quercus mongolica). Sprague-Dawley male rats were randomly assigned to normal and high-cholesterol diet groups, which were sub-divided into fiber-tree diet (FF group) and soluble dietary fiber groups based on soluble dietary fiber supplementation level. Serum total-TBARS and LDLTBARS, hepatic cytochrome $P_{450}$ and TBARS concentrations in soluble dietary fiber supplementation groups were significantly reduced. Hepatic SOD and GSHpx activities in soluble dietary fiber supplementation groups were significantly increased compared with FF group. $PGE_{2}$ and $LTB_{4}$ contents in soluble dietary fiber supplementation groups were significantly reduced. Ig M contents significantly increased in soluble dietary fiber supplementation groups. Results indicate soluble dietary fiber manufactured from Q. mongolica has anti-oxidant effect similar to that of commercial dietary fiber.
