Influence of Ethylene and 1-Methylcyclopropene Treatment on the Storage Quality of 'Hongro' Apples

Abstract

Effects of postharvest ethylene and 1-methylcyclopropene (1-MCP) treatments on the physiological metabolism and quality of 'Hongro' apples (Malus domestica) were investigated. Fruit were harvested at commercial maturity, treated with 100 $\mu$L.L$^{-1}$ ethylene for 24 hours at 10${^{\circ}C}$ or 1 $\mu$L.L$^{-1}$ 1-MCP for 24 hours at 10${^{\circ}C}$, and then stored at 0${^{\circ}C}$ and 20${^{\circ}C}$ for 50 days, respectively. Ethylene evolution was completely inhibited by 1-MCP treatment at both storage temperatures. In contrast, 1-MCP treatment effects on respiration were distinct only in apples stored at 20${^{\circ}C}$. Ethylene treatment tended to increase ethylene evolution and respiration, especially during 20${^{\circ}C}$ storage. Rises in the ethylene evolution and respiration rates appeared clearly in control and ethylene-treated apples, while not detectable in 1-MCP treated apples during 50-day storage. Storage at 0${^{\circ}C}$ also effectively reduced ethylene evolution and respiration while delaying the ethylene and respiration peak times. Effects of 1-MCP on fruit quality were significant for maintaining flesh firmness and overall taste while reducing surface greasiness during storage. Overall data indicated that postharvest 1-MCP application could maintain fruit quality during storage at ambient temperature. However, potential of 1-MCP treatment may be limited to 'Hongro' apples programmed to be stored at 0${^{\circ}C}$ for short period.

시장 출하 성숙기에 수확한 사과 '홍로' 과실에 에틸렌(100$\mu$L.L$^{-1}$ for 24 hours at 10${^{\circ}C}$) 및 1-Methylcyclopropene(1-MCP)(1$\mu$L.L$^{-1}$ for 24 hours at 10${^{\circ}C}$)를 수확 후 즉시 처리하고 0${^{\circ}C}$ 및 20${^{\circ}C}$ 저장 과정에서 생리대사의 변화와 50일 저장 후 품질을 조사하였다. 수확 후 1-MCP 처리는 0${^{\circ}C}$와 20${^{\circ}C}$ 저장 과일의 에틸렌 발생을 효과적으로 억제한 반면 호흡속도 감소에 미치는 효과는 20${^{\circ}C}$ 저장 과일에서만 관찰되었다. 수확 후 에틸렌 처리는 20${^{\circ}C}$ 저장 사과의 에틸렌 발생과 호흡을 증가시켰다. 저장기간 중 에틸렌 발생과 호흡의 증가현상은 무처리와 에틸렌 처리 과일에서만 나타났으며 1-MCP 처리 사과에서는 보이지 않았다. 한편, 0${^{\circ}C}$ 저온저장은 에틸렌 발생과 호흡을 효과적으로 억제하면서 증가현상이 나타나는 시점을 지연시켰다. 과실 품질에 미치는 1-MCP 처리 효과는 20${^{\circ}C}$ 상온저장 후 과육경도와 종합식미 유지 및 표피 미끌거림 방지에 유의성을 보였다. 실험결과를 종합해 볼 때, 1-MCP 처리는 상온저장 '홍로' 사과의 품질유지에는 효과가 뚜렷한 반면, 단기간 0${^{\circ}C}$ 저온저장 시에는 그 효과가 제한적인 것으로 판단되었다.
