Bagging of Ca-coated Bag Affects Calcium Content and Physiological Changes in 'Niitaka' Pear Fruits

배 '신고' 과실에 칼슘코팅봉지 씌우기와 과실의 생리적 변화

Abstract

Oriental pears are mostly cultivated with bagging from the fruitlet stage until harvest in Korea. To increase the calcium content of 'Niitaka' pears (Pyrus pyrifolia Nakai), we cultivated the fruit with calcium-coated paper bag which was treated on inner layer of conventional double layer yellow roll paper bag. The liquid calcium compound extracted from oyster shells were used as the raw material and wax emulsion and methanol were added as supplementary agents. The calcium contents of the fruits and the quality parameters were examined during 120 days of cold storage period. There were no significant differences in soluble solids and titratable acidity during storage period, while the firmness of fruit flesh bagged with the calcium-coated paper bag was higher than that of the conventional paper bag which showed 23.9 or 23.1 N, respectively. Calcium content in the peel of the fruit bagged with calcium-coated paper bag was 14.7% higher than that of the fruit bagged with the conventional bag. The increase of calcium contents in the flesh by the depth were also revealed in calcium-coated bag when compared with conventional bag, showing 5.0, 6.0 and 6.9% increase of calcium in 0-5 mm, 5-10 mm and 10-15 mm region from the peel, respectively. The fruits produced by bagging with calcium-coated paper bag showed a tendency of low respiration rate during low temperature storage but there was no significant difference in ethylene evolution. During the storage, the solubilization of water soluble pectin was lower in the fruit bagged with calcium-coated paper bag than in conventional bag treated one.

봉지를 씌워 재배하는 '신고' 배의 칼슘함량 증가를 위하여 굴 껍질에서 추출한 액상칼슘화합물을 봉지 내지에 코팅한 봉지를 씌워 재배하고 과실의 칼슘 함량 및 품질 변화를 조사하였다. 칼슘봉지 괘대 과실의 저장 중 과실의 품질변화를 관행의 황색롤지 괘대 과실과 비교한 결과, 칼슘코팅 봉지 괘대 과실은 관행봉지에 비하여 저장 120일 동안 가용성 고형물, 산함량에서는 차이가 없었으나 경도는 저온저장 기간 중 높게 유지되어 저장 120일에 23.9N으로 대조구 23.1N에 비해 높게 조사되었다. 과실의 칼슘함량을 비교하였던 결과, 과피의 칼슘함량이 가장 높게 조사되었는데 칼슘코팅봉지를 괘대한 과실은 수확 시 관행봉지에 비교하여 과피에서 14.7% 높게 조사되었다. 과육의 부위별 칼슘함량은 과피 직하부위가 가장 낮게 조사되었는데 칼슘봉지 처리에 따라 5.0%(0-5mm), 6.0%(5-10mm), 6.9%(10-15mm)의 칼슘함량 증가를 나타내었고 120일의 저장기간 중에도 같은 경향이었다. 과실의 호흡량은 칼슘봉지 처리구나 저온저장 기간 중 낮게 유지되었으나 에틸렌 발생량은 차이를 보이지 않았다. 저장 중 과실 세포벽의 수용성 펙틴 함량은 칼슘코팅봉지 처리구 과실이 대조구에 비하여 낮은 경향이었는데 특히 과육에서의 함량이 대조구의 50% 수준으로 조사되었다.
