Quality Characteristics of Sulgidduk Added with Cabbage Powder

양배추 분말을 첨가한 설기떡의 품질 특성

Abstract

The objective of this study was to evaluate the quality characteristics of Sulgidduk added with cabbage powder. The moisture contents of Sulgidduk added with cabbage powder ranged from 37.2 to 33.7% and were significantly lower than those of the control. As the amount of cabbage powder increased, the L-value was reduced, while the a- and b-values were increased. In terms of textural characteristics, Hardness, Adhesiveness, Springiness, Cohesiveness, Gumminess, and Chewiness decreased with greater concentrations of cabbage powder. Sensory evaluation revealed that the favorite degree of color, flavor and taste received high increasing scores with increasing addition amounts of cabbage powder, while the Chewiness did not differ significantly (p<0.05) among the samples. The moistness found to be highest in the control, while it decreased as the amount of cabbage powder increased. The overall acceptance was highest as (6.00) for the Sulgidduk (CS6) that contained 6% of the cabbage powder. Overall, the results of this study indicate that adding 6% cabbage powder to Sulgidduk was produced the optimal results, and provided good quality characteristics and high overall acceptance.

양배추 분말을 0, 2, 4, 6, 8, 10%로 첨가하여 제조한 양배추 설기떡의 수분 함량, 색도, 기계적 검사에 의한 조직감, 관능 특성을 실시한 결과는 다음과 같았다. 양배추 분말을 첨가한 설기떡의 수분 함량은 37.2~33.7%로 무첨가시료(37.7%)에 비해 낮은 수분 함량이었으며, 색도 측정에서 L값은 대조구가 65.52로 가장 높은 값이었으며, 양배추 분말을 첨가한 시료의 경우는 61.94~53.61로 양배추 분말의 첨가량이 많아질수록 유의적인 차이로 감소하였다. a값과 b값은 대조구에 비해 양배추 분말의 첨가량이 많아질수록 증가하였다. 견고성(Hardness), 부착성(Adhesiveness), 탄력성(Springiness), 응집성(Cohesiveness) 점착성(Gumminess)과 씹힘성(Chewiness)은 양배추 분말 첨가량이 많을수록 감소되는 경향이었으며, 양배추 첨가에 따라 쌀 전분 함량이 희석되고, 고식이섬유원으로서 식이섬유소가 수분 결합력이 커서 보수성을 갖기 때문에 설기떡의 견고성 및 점착성(Gumminess)의 물성이 감소되는 것으로 생각된다. 양배추 설기떡의 관능적 기호도 중 색(Color), 향(Flavor)과 맛(Taste)의 평가는 양배추 분말의 첨가량이 많아질수록 높은 점수를 받았으며, 씹힘성(Chewiness)은 대조구를 포함한 모든 시료에서 유의적인 차이가 없었다. 촉촉한 정도(Moistness)는 대조구가 5.85로 가장 높은 점수를 받았으며, 0~2%, 4~6%와 8~10% 첨가 시료 간에는 유의적인 차이는 아니었으나, 양배추 분말의 첨가량이 많아질수록 5.42에서 3.85로 점차 낮은 점수를 얻었다. 이 결과는 멥쌀가루보다 건조한 양배추 분말의 첨가량이 증가됨에 따라 설기떡의 수분 함량이 감소되었기 때문이며. 본 실험과 같이 양배추를 건조시켜 첨가할 경우 설기떡 제조 시에 수분 첨가량을 추가해 주어야 한다. 전체적인 기호도(Overall acceptance)는 양배추 분말을 6% 첨가한 CS6시료가 6.00으로 가장 높은 점수를 받았다. 양배추 분말을 첨가하여 설기떡을 제조할 경우 6%를 첨가한 시료가 색, 향기, 맛, 촉촉한 정도에서 적당한 정도로 나타났으며, 전체적인 선호도에서도 가장 선호하는 것으로 평가 받았으므로 가장 적절한 배합비로 생각되며, 본 실험을 통하여 인돌(indole)과 같은 피토케미컬(phytochemical)을 함유하고 있는 양배추가 부재료로 첨가된 기능성 떡의 개발 가능성을 확인할 수 있었다.
