Effect of Storage Temperature on Chilling Injury and Fruit Quality of Muskmelon

Abstract

The effects of storage temperature on the incidence of skin browning disorder and decay, and quality changes in muskmelon (Cucumis melo L. cv. Reticulatus) were investigated in different cultivars and harvest seasons. Melons were harvested at commercial maturity, stored at 0, 2, 5, 10 and 20${^{\circ}C}$ for two weeks in netted muskmelon 'Earl's' or 4 weeks in non-netted muskmelon 'Homerun Star'. The incidence of skin browning was 100% after 2 weeks of storage at 0 and 2${^{\circ}C}$, and also after 3 weeks storage at 5 and 10${^{\circ}C}$ in 'Homerun Star' fruit. This symptom appeared more quickly and severely in the fruits stored at lower temperatures. The decay in 'Earl's' fruit was induced by Ascochyta sp. and Fusarium semitectum. The fruits harvested in summer season decayed up to 100% and 33% after 1 week storage at 20${^{\circ}C}$ and 10${^{\circ}C}$, respectively. No decay was observed on fruit harvested in autumn season at the same storage temperature. Only 12% of fruit decayed even after 2 weeks of storage at 20${^{\circ}C}$ and no decayed fruit was found at 10ºC. When the stored fruits were transferred to 20${^{\circ}C}$ after 2 weeks at 0, 2, 5, 10 and 20${^{\circ}C}$, the sensory quality was lower in fruit stored at lower temperatures such as 0 and 2${^{\circ}C}$ than 5 to 10${^{\circ}C}$.

무넷트멜론 '홈런스타'와 넷트멜론 '얼스'를 0, 2, 5, 10, 20${^{\circ}C}$의 저장온도에서 각각 4주 및 2주 저장하여 과피갈변 장해 및 부패 등을 조사하였다. 무넷트 멜론 '홈런스타'과실은 0${^{\circ}C}$ 및 2${^{\circ}C}$에서 저장 2주 만에 과피갈변이 각각 75.9% 및 37.6% 발생하였으며, 저장 3주 후 5${^{\circ}C}$ 및 10${^{\circ}C}$에서도 과피갈변이 각각100% 및 38.7%가 발생하였다. 즉, 온도가 낮을수록 과피 갈변 현상은 더욱 심해지는 경향을 보였다. 넷트멜론 '얼스'의 수확후 부패에 영향하는 균은 Ascochyta sp. 과 Fusarium semitectum이 영향하며, 여름철에 수확(7월 14일)된 멜론은 20${^{\circ}C}$에서 1주 만에 100% 부패하였고, 10${^{\circ}C}$에서도 33%의 부패율을 보였다. 가을에 수확(10월 7일)된 과실은 20${^{\circ}C}$ 및 10${^{\circ}C}$ 에서 1주 후에 부패과를 전혀 볼 수 없었으며, 2주 후에도 20${^{\circ}C}$처리구에서 12%만이 미약한 부패증상을 보였고, 10${^{\circ}C}$에서는 전혀 부패하지 않았다. 0, 2, 5, 10${^{\circ}C}$에서 2주 저장 후 상온 20${^{\circ}C}$에서 1주일 모의 유통 후 식미도는 0${^{\circ}C}$와 2${^{\circ}C}$에서 저장된 멜론보다는 5${^{\circ}C}$, 10${^{\circ}C}$에서 저장한 멜론의 식미도가 높았다.
